This cow's milk cheese with a washed rind is aged in natural limestone caves to encourage the unique flora growth on the outer rind. During the aging process the ivory, chalky texture of the cheese ripens to a buttery and soft cheese with a mild yeasty taste. Accompanied with muscatels in rum.
Dolce Latte Mauri Bontazola, Lombardy, Italy
Bontazola is a sweet version of the traditional Piccante Gorgonzola. Delicate in flavour and creamy in texture this cow's milk cheese is made using a select mixture of curds from morning and evening milk. The blue penicillin moulds gradually permeate the cheese with a fruity sweetness. Accompanied with fresh pear.

Aged for a minimum of two years, this calf's milk cheese ranges from ivory-white to straw-yellow in colour. Parmigiano Reggiano is flaky and finely grained in texture. Accompanied with imported panforte.
